If doing a two tank boat dive in the Caribbean, is the Shark Zen long sleeve adequate for sun protection?

I wore one and dove in it for 4 days of 2 tank dives and had no problems with sun exposure.This was in Cozumel

Yes, it would be, but make sure to drink plenty of water, I have had a few cramps due to not staying well hydrated.

For the body yes, but in shallower water I believe in head protection like a buff. It is amazing how fast your head can burn in the water.

The shark Zen long sleeve shirts are awesome for sun protection.  I've just returned from a week in Cozumel.  I used a 3 mil long sleeve (Fourth Element) shirt for diving.  For the boat I used a Shark Zen long sleeve shirt, a buff to protect my neck, and a hat.
