What is the best type of clothing (pants, shirts, shoes etc) for warm offshore kayaking?

Shoes are important since you might want off at some point. Floating flip flops are ok for light duty. I love low profile surf booties but wave walkers would work.

I love the sun but take a towel or two. They come in handy as sun protection on legs & shoulders. When it's really hot, they can be wet.

In colder weather, nothing beats a light wind suit for protection from cool wind and water. Large enough to put fleece under them if it's really cold.

Loose fit rash long sleeve shirt and boardshorts. If you want full coverage you can opt for lycra skin under shorts it works well without the risk of overheating which is very easy on a kayak.

Board shorts and long sleeve fishing shirt.  Like the shirt nice and loose so it is airy.  A good hat is a must.  I like a columbia wide brim hat with ventilation.  I agree with other answer that shoes are important especially if fishing near oyster beds. The shoes need to be something that will stay on feet and protect toes like Keen sandals.
