When accidentally hooking a shark, what is the best way/method to unhook it safely for you and the shark?

very carefully

Depending on the size of the shark, you'll want to reel it in as close as you can so that you can determine if you can safely remove the hook without loosing fingers, if you can't, then cut the line as close to the hook as you safely can. remember that shark skin is rough like sandpaper and it will be thrashing about. try to wait till it is calm before attempting to cut the line near the mouth or remove the hook (again depending on size). It will also depend on where you hooked it from, surf fishing, you can probably bring it to shore fairly safely to unhook or cut the line and get it back in the water quickly, if you are on a kayak, it might take you for a ride and you may decide you need to cut it farther from the mouth if you are at risk of flipping the yak, if you are on a boat, you can probably get it along side the boat and try to unhook or cut the line. the key is to cut the line as close to the hook as possible, the ideal is to remove the hook completely but safely. It'll mostly come down to common sense and assessing the shark's demeanor. Just my two cents. <3 Sharks :-)

Biologists say just cut the line. It actually does less harm to The shark than you may think. Most people kill the fish trying to pull the hook.
