What are you favorite rigs, baits, etc, for catching snook or tarpon?

Snook fishing for me when I lived in Florida meant fishing the fall mullet run in the surf. For that, a simple egg sinker fish finger rig, with the weight dependent on the current, was the rig of choice. I cast netted live mullet and used those for my bait, walking the rig down the beach with the current and had good success most years. I did occasionally catch a snook while wade fishing the Indian and Banana River Lagoons while using soft plastics on jig heads, but these were just bonuses to my targeted trout and redfish.

For snook I use live pilchards which can be caught using a throw net or bought in a bait and tackle store. Take the pilchards and put it on a bare hook or a weighted jighead and cast it then reel it in slowly. For tarpon, I fish live shrimp or shrimp gulp on a weighted jighead in heavy current and let the bait go far out with the current and slowly retrieve.
