Beyond the depth limits of Nitrox, what are the determining factors for when you use Nitrox?

You should get yourself certified with NITROX and dive the different blends. While in California I was diving NITROX and had to make a long surface swim while breathing off the blend. I felt like I was doing great because I wasn't getting tired as in the past when I've had to make a long surface swim. Then I remembered I was breathing NITROX and boy did it make a difference. A lot of times on driving home I've continued to breathing a NITROX blend driving home.

I usually use nitrox on my second of a two tank boat dive.  I will also use nitrox when we are instructing at the lake.  We usually do multiple classes over the weekend so I use nitrox to keep from get too tired from divemastering on multiple days.

I use it any time I am going to do multiple dives across multiple days - especially on destination dive trips. I like the increased bottom time on repetitive dives while allowing for shorter surface intervals if diving two tanks in the morning and two tanks in the afternoon.
