Is an inflatable stable with a cooler?

100% depends on the size of the cooler. You wouldn't want to add a heavy, tall cooler because it increases your chances of momentum flipping you sideways. But a reasonably small, non top-heavy cooler shouldn't affect you much, if at all.

Maybe use a soft zippered cooler and tether it that way if you flip it will be saved.

My boards are super stable and I have a cooler on them all the time! I use a soft sided one, but they can easily support a hard roto-molded cooler too.

Ice Mule makes dry bag coolers that fit under bungee straps. Work great as a dry bag when a Cooler isn’t needed. Also, cell phones easily over heat in a dry bag, ice mule is insulated and even w no ice in it will keep your phone from overheating and shutting off. Yeti style cozy for each can of beer can elementary the need for ice in ice mule....Good option for Sunset paddles, w no ice in the ice mule a dry shirt can be stored in it for paddling back after dark.

Just standing on a board makes you look cooler.  So it depends on your balance.
