Whales, dolphins...kind of an obvious answer. Never been with otters, that would be cool. Have swam and dove with seals. Great! - Really most any species can be fascinating scientifically, e.g. even spiny lobsters. Wrote a science paper on them. Was mentored by a great scientist aboard Cousteau's Calypso. Write about it in my book Frogmen.

Rays. When they come in schools, there is something so very graceful, like they are performing a water ballet.

Octopus.  I have seen numerous octopus, various sizes and ages through my dives.  The are fascinating and curious.  I have seen them touch and explore divers and their gear. The are chameleon like.  To witness one floating through the water as if it was flying, check Soaring with Giants on YouTube.  That is my son with it, diving when he was about 16.

The big Pelagics are always cool, but don't miss out on the little ones. Your divemaster will typically point out cool things like nudi branches, sea horses, sea spiders, etc.... in short, take your time to enjoy it all.

Sea turtles. They are so calm and graceful (at least in the water). Also my favorite animal. Squid are cool to mess around with as well to watch them change color.

Whale sharks and Green Sea Turtles are my top 2.  Sharks are a close third.
