depends on where i am kayaking, but i like to use soft plastics like paddle tails or flukes. If there is a lot of grass i will rig it weedless, or sometimes i'll switch to a spinner bait. I also try to use top water once in a while, but i haven't had much luck yet with that, only caught a small lady fish on a jerkbait so far.
If i had live bait, or cut bait, i'd try to use that too, but i usually only have artificial bait with me.
