What is your favorite saltwater catch, and how do you cook it?

I love to catch snook for the fight they put up, but prefer to eat red drum.  Favorite way to cook is with a fish basket filled with chunks of vegetables drizzled with olive oil, salt and pepper. How about you?

I also love redfish and sea trout. I try to get the flavor of the fish to shine so I simply wrap the fish in foil with some olive oil, pepper, slice of lemon and a little paprika. Bake until its flaky. Simple but delicious.

Of course after thinking about this...you can't beat blackened redfish or a tuna steak cooked on the grill medium rare with a peppercorn crust!!!

I don't know how to cook fish medium rare. You go by time and experience or do,you use a meat thermometer?

I just look at the edge of the steak and when the top and bottom are browned and the middle is a nice pink color that seems to be the time to eat. Fresh tuna steaks work much better for this than the frozen ones you can buy. I generally use those for blackened tuna with some Cajun remoulade on a nice crusty roll.

Favorite saltwater catch is hard to say since I live in Michigan but some of my favorites to eat are cobia, mahi-mahi, and wahoo. But I cook just about all of my fish the same. Make a tray out of foil, olive oil on bottom, pepper, garlic salt, italian seasoning, paprika and lemon juice over the fish. Either throw it in the over or on the grill depending on time of year. I don't think fish needs much help and should not be overloaded with seasonings and sauces

I'm getting hungry reading this post and the responses. I am still new to catching inshore fish (Snook, Redfish, Trout) so I haven't had a chance to try those yet but they all sound yummy. Sometimes I'll cook up a Spanish Mack when i catch one that is keeper size, i usually like to fry the fillets in a pan with some olive oil, lemon, garlic salt, and old bay - doesn't sound like much, but it tastes pretty good.

Snapper is always good too, sometimes i'll fry it similar to above, or bake it using olive oil, salt, pepper, and lemon. I need to fish for food more often, I usually just do catch and release.

Any good home made recipe for the blackened portion or do you buy store bought blackened seasoning already in a shaker?

Well, aside from striped bass, which is awesome, I'd have to say I like blues too. Fishy but good. Small ones simple saute in butter with salt and pepper. Larger ones we smoke.
