To be honest I just use shrimp and have had the best luck with them.

When I lived in Florida, snook fishing for me was (1) in the surf during the fall mullet run and (2) fishing at Sebastian Inlet State Park.  Obviously, live mullet during the fall migration was the way to go in the surf. However, bucktail jigs, in particular the "flare" jigs were very successful at Sebastian. They have a wide profile and are a little slower sinking so they didn't snag as easily.  Live mullet on a fish finder rig was also used. It really just depended on how quickly I could cast net mullet on which technique I would use.

If you want to do it using artificial lures, the DOA shrimp is actually pretty good. At least I have decent luck with it. Let it sink to the bottom and work it slowly (like it is crawling on the bottom) maybe a twitch or two. Fish it around dock pilings or other structure.
