When do you decide if you should cut the line or keep going when hooked on something big in a kayak?

I've only been kayaking a few times as I just got into kayak fishing and finally bought my kayak. I haven't caught anything yet (only been out twice). Just wanted to see what advice was out there for if you catch something really big (shark, very large fish, whatever) and how/when to decide if you keep on trying to fight the fight or let it go.

I plan to fish for smaller fish so as to avoid the problem, e.g. smaller gear, lures, bait, etc. BUT in the event I catch something too big, e.g. I can't control the kayak's stability or location (I'm getting pulled), I try and go with it a bit but if too long or I'm in danger, e.g. a channel, rocks, etc. then I cut the line. I hate to do so though...for the creatures sake.

You will know! If not you will learn what that means. Perhaps the point when you are being dragged around or about to tip- might want to cut the line
