What are the pros and cons of sit on top kayaks vs. sit inside kayaks?

Depends on what you want to do... I like my sit on top for fishing, i also like it because if water gets in, it just drains from the scupper holes. It is pretty much unsinkable (unless you bust a hole into the hull) so for me, it seemed the most practical and safest. You can also stand up on some Sit on tops and use it like a paddle board if it is wide enough and you have good balance.

I never used a sit in kayak, so, i can't really say  much about them, i'm sure they have their pros too, but again, it depends on what you want to do with your kayak and what kind of water you'll be using it for.

I have sit on top and sit in models. The sit on top is easier to maintain, clean, board, stay dry, and maneuver.

I also have some sturdy inflatables which are great for visitors and to throw in for assorted trips.  It's great that they take up little space!

The sit on top is also less hot, important in warm climates. However, even when the weather was cold, I liked the sit on top better because of the other features.

I prefer sit on top, I fish and move around a lot .. I have also seen many capsize out of the sit ins.

Also you can fit more gear on the sit on tops in my opinion .

My kayak preferences are mostly dictated by mission profile: sit-in kayaks are better for tripping and long-distance cruising. Sit-in kayaks are, by definition and design, "rollable" and by having lesser beams, faster. Sit-on-top kayaks have increased roll stability, are generally slower, and not really designed to be rolled. Both have their place, depending on one's needs.
