Where I lived in Florida snook could be caught year round. I always found that Fall, during the mullet run, was the best time to consistently catch them in the surf as they followed those huge schools of mullet. Tarpon were not a fish I could count on very much so I did not target them. I could see them during the mullet run crushing the schools, but they were generally out of casting distance from the beach.

I live in the TB area of Florida and prefer wade fishing for snook in the winter when they move up in the shallow flats.  Can't help ya with Tarpon as I prefer to wade fish. I know folks who caught Tarpon wade fishing or off of the beach but I target snook and redfish.

Used to catch them in the fall at Marco Island. Just casting off the beach, wading in a bit too, and even some tidal pools. Long long time ago, before all of the development. It was so beautiful back then.

Depending where you are, it can change. Here is an article I found, hopefully it helps!
