For me I like Panama's Hannibal Bank.  Massive Marlin and Yellowfin.  Costa Rica offshore offers great numbers of large Pacific Sailfish and is a close second.

Limited experience but I have done great everytime I have fished off Islamorada FL.  Great experience in Costa Rica off of Tambor, Pacific coast.

I have only been able to fish in the States but I love fishing offshore in Pensacola, I am lucky to have a cousin that has a boat and we have caught some big snappers and some huge King Mackerel. It is always a great time out on the water!

I do love fishing the offshore canyons of my home state of NJ. There's a tremendous variety to catch when the bite is on. However, the best place I've fished so far is off Prince Edward Island in Canada for giant bluefin tuna. Where else can you catch fish that range from 400-1200 lbs within 3 miles of the beach. It's a fishery every lover of offshore fishing should visit.
